<p>Feito a base de manjericão e azeite de oliva, o molho pesto é processado com queijo e uma pequena castanha, chamada Pinolis. Para quem quer tentar fazer em casa para incrementar receitas com massas, esta pode ser facilmente trocada pela nossa castanha de caju, não criando assim grandes alterações na receita.</p>

<p>Os Chefs André de Melo (Speciali) e Matheus Mariani (Bravo Catering) ainda complementam que no Brasil existem várias criações brasileiras inspiradas no molho pesto, como base de rúcula por exemplo!</p>

<p>O Chef André de Melo, aqui da Speciali, promete novidades com um ingrediente que chegou com força total no Brasil e está caindo no gosto mineiro: O alho negro!</p>
<p>&#8220;Esta iguaria é basicamente um alho comum que é colocado em maturação por cerca de um mês, transformando o alho do nosso dia a dia em um produto suave e de fragrância frutada!” Diz Matheus, Chef do Bravo Catering.</p>
<p>Depois de ter caído nas graças dos europeus, Japão e Korea brigam para dizer qual é o país de origem do alho negro. Mas o que importa é que o produto já é produzido no Brasil, e é facilmente encontrado para quem deseja testá-lo.</p>
<p>O próprio Chef André de Melo já fez várias experimentações para pizzas novas com esse ingrediente.</p>

<p>Quando se aproxima o Natal, a procura por damascos, pêssegos e ameixas cresce exponencialmente. Mas, ainda sem ameaçar o reinado destas, três pequenas frutas originárias da Ásia também possuem espaço entre as preferências de fim de ano: trata-se da lichia, da amora e da cereja. Elas não reinam nas mesas domésticas, mas em restaurantes surgem como sugestões que unem sofisticação e sustentabilidade &#8211; já que o consumo de produtos da safra, caso das três, apresenta uma série de vantagens econômicas e naturais.</p>
<p>O chef do restaurante Saatore, Wanderson Costa, é um destes que não perde um produto da estação. Ele faz questão de procurar pessoalmente o que irá valorizar os preparos do estabelecimento e, por isso, só na última semana, esteve três vezes no Ceasa-MG para estudar possíveis ingredientes. Foi daí que surgiu a ideia para o galeto com amoras. &#8220;Não é um prato do cardápio fixo até porque, nas outras épocas do ano, é difícil encontrar a fruta. No entanto, como vi que estava na safra, testei a receita e resolvi incluir no menu&#8221;, explica. Expert no assunto, ele também ensina o que é necessário observar para levar um produto de qualidade. &#8220;A textura é o mais importante. Ela não pode começar a melar, nem a murchar&#8221;, diz.</p>
<p>O chef da Speciali, André de Melo, também faz questão de defender o uso de insumos da safra. &#8220;A grande vantagem é que você consegue ele mais fresco e natural, sem uso de estufas, agrotóxicos. No fundo, nada mais é do que respeitar a natureza e suas condições. Muita gente acha positivo conseguirmos encontrar determinados produtos o ano todo, mas eu, como cozinheiro, não acho, porque vejo uma manipulação que acaba por padronizar as nuances de sabor&#8221;, afirma.</p>
<p>A convite do <strong>Gastrô</strong>, André criou um prato com cerejas, que, ensina, precisa ser comprada bem brilhante e vermelha. &#8220;Como é época de calor, fiz algo refrescante, com uma sopinha de amêndoas e lagostim&#8221;, destaca.</p>
